Hi, I played through The Witcher 3 1,5 years ago, when it was released and have'nt updated my version (1.07) since then. My question is: Is there any way to update to 1.1 and then to the newest version or do I have to reinstall the whole game using the version from gog.com?

Older updates are no longer available. The updates from 1.07, including any DLC, would be so massive that you may as well download the latest version anyway. So yes, install from scratch.
