How do I get back to v1.63? I am not impressed with 2.0 and wish to continue my saves with 1.63

As you are asking this I assume you are using Galaxy (?) -> open the menu next (right) to the "play" button, then select "Manage installation"->"Configure...". There you will have the option to revert to earlier versions of the game (you may need to select "show more versions" to select 1.63.

Besides that: I am not sure if it is possible to download older "offline installers" - but IMHO it is always a good idea to download and store those before updating a game (just in case).
