mrkgnao: Has a long-standing major bug in the current version and the only way to work around it is to rollback to an earlier bug-free version, a feature available only in galaxy (links to relevant post):
- Divinity: Original Sin
There's a mod which includes the bug free file from previous versions of the game: https://www.nexusmods.com/divinityoriginalsin/mods/118/?tab=files. It works like a charm. You don't have to rollback to the previous version using Galaxy.

Ancient-Red-Dragon: Since GOG doesn't make the earlier & non-bugged versions available for download, then the only possible way to play a non-bugged version on GOG is by using Galaxy to rollback the game to an earlier version, before the bug was introduced. And even after doing that, there is still no way that GOG offers to download a non-bugged version of the game in order to create a backup copy of the non-bugged version.

So for those reasons which I've just described, I think Divinity: Original Sin qualifies for the list in the OP.
I didn't find any wishlist entry for pre-Galaxy backup installers versions so I created one:
https://www.gog.com/wishlist/games/divinity_original_sin_enhanced_edition_pregalaxy_offline_installers
I don't know which is more stupid:
GOG not providing access to a non-bugged version of the game; or a Larian managing to "break" an hit-game like D:OS.
FFS! :(

mrkgnao: I plan to list here games that (at least for some people) clearly do not work without galaxy but do work with galaxy.

Ancient-Red-Dragon: How are we defining "work" here?

I think a game that includes a major bug in the latest versions that makes it practically unplayable, even if it is technically sort-of playable, is neither working nor running properly, and therefore could be said not to be working.

One game like that on GOG is Divinity: Original Sin. All the latest versions for the past two years include a game-ruining bug in it, which makes the tooltips for your skills not display properly as they were designed to do.

Due to this bug, you cannot see the level of the skill you are looking at, even though this is vital information that is 100% necessary to play & enjoy the game in a reasonable way, and it is information that you are supposed to be able to see, and that indeed you can see if you are using the earlier versions before this game-wrecking bug was patched into the game (yet apparently it will never be patched back out of the game, as it already hasn't been for the past 2+ years).

Since GOG doesn't make the earlier & non-bugged versions available for download, then the only possible way to play a non-bugged version on GOG is by using Galaxy to rollback the game to an earlier version, before the bug was introduced. And even after doing that, there is still no way that GOG offers to download a non-bugged version of the game in order to create a backup copy of the non-bugged version.

Out of curiosity I just downloaded the most recent offline installer, removed Galaxy from my system and did a fresh install with the offline installer. everything ran fine, all the tooltips and UI ran properly with no issues.

mrkgnao: By way of information about "For The King", here is the text of ticket I have opened with GOG's support.

I will update with GOG's response, if and when it arrives.
Thanks please do. I have this game and am worried now I'll have to open a support ticket.
Thanks everyone for posting. Updated the D:OS entry in the OP with your input.

So did I, and the bug is still there as far as I can see.

If you hover over a skillbook in your inventory, a tooltip will appear. The third line on the tooltip (below the skillbook name and the discipline it belongs to) should list its level (Novice, Adept, etc.). In the newest version (2.0.119.430 KO update), this line is missing, but this depends on your input device (pointed out to me by Marioface5). Curiously enough, if you play using KB&M, it is missing, but if you choose to play using a controller, it's not. So using a controller is another temporary workaround.

Does all versions mean the original and enhanced? Or all versions of the original? First I've heard of this bug.

I have contacted GOG about the D:OS bug too. Here is the text of my ticket.

"I have come across a major bug (Skillbook level not shown) in the current GOG version of "Divinity: Original Sin - Enhanced Edition". The developer, Larian, has been aware of the bug for a while now (see https://www.gog.com/forum/divinity_series/dos_skill_book_level_not_showing) and apparently has contacted you about it before. Still, nothing seems to have been done about it.

The bug is present in the two latest GOG versions of the game (Chinese and Korean localisation versions). The last bugless version is version 2.0.119.430 (A) from 22 Mar 2017. Since I do not use galaxy, I cannot revert to the older version.

Therefore, could you please supply me with a set of links to the offline installers for version 2.0.119.430 (A), so I can play the game without this major bug?

Better yet, can I suggest that you add the older installers to the libraries of all the game owners, alongside the existing installers, so that other owners will not need to trouble you about it as they come across the bug?"

I will update with GOG's response, if and when it arrives.

I suspect it's only the Enhanced Edition, since the bug was introduced alongside the Chinese localisation, which is not available for the Original Edition.

That said, if you have save files for the original (I don't), with some skillbooks in your characters' inventory, you can check for yourself (see here for details)

I've spent the last 10 minutes googling and honestly can't find jack about this error anywhere. Not on PC Gaming Wiki, not on the Steam forum, nothing. If it's a game breaking glitch you'd think I could find something about it somewhere.

Well, it's apparently a GOG-only bug...

I checked, even bought a new skill book in the offline version, Galaxy completely removed and the skill levels are showing up just as I reported earlier. Playing with a KB&M as well.

Thanks. It's apparently only affecting some people.
I don't have this bug either with Keyboard and Mouse and i have played a lot even after the latest patch, would be easier to report if the exact cause could be found which may be more than 1 like inputs.

I mean it should be fixed but you have to wonder how many people have this bug if it gone ignored this long. Older offline installers for those that have issues is nice and GOG should probably offer it but it doesn't fix the underlying problem which only Larian can fix and i do expect better from them.
