I saw some games list overlay support, others don't. How do I use the overlay on GOG while I'm in an overlay supported game?

If you have GOG Galaxy installed, I'm certain there's some internal documentation to grok from. If you don't, then you don't have an overlay.

What does grok mean? Yes, I have Galaxy installed. Didn't see any key binding info in the settings so I was just wondering.

To access overlay in a game that supports overlay you'll have to press SHIFT+TAB at the same time.

To show FPS inside the game you'll have to press CTRL+SHIFT+TAB at the same time.
