I second Arx Fatalis with Arx Libertatis. Great game with a great mod.

I also recommend Darklands and it's spiritual successor Serpent in the Staglands. Both are excellent games that are also exceptionally detail oriented. Make sure you pack blankets and food, and a tent if you plan to sleep in the rain. Pneumonia will kill you as readily as any enemy.

Some of the Forgotten Realms Archives titles are unique to GOG as well and offer an exquisite foray into the RPG goodness of yester-year.

The only mod for that game I want is one which makes it faster to switch between your primary, secondary weapon and flashgrenades. Or perhaps on which makes an enemy take longer than 3.4 nanoseconds to raise his gun, aim and shoot me :P

Thanks I personally love tactical shooters like insurgency I will definetly look into it :D
