Will it end like some previous Steam sales where they have reruns of previous sales (Like the Indie RPGs sale for example)? Also, why is the Baldur's Gate series not on sale?

It will end on the 21st of December when we get set on fire (or something like that).

Baldur's Gate isn't on sale because they most likely have plans for that game
What goes and what doesn't go on sale is occasionally dictated by the publishers - hence BG probably not being on sale. Used to happen with the Gothic series as well.

As for how the sale will end - as far as I recall GOG does not do reruns of sales, but GOG is also constantly trying new approaches so I wouldn't rule it out as such.
The last day Sacrifice goes on sale and every GOG server melts down from the entire internet buying it all at once.

Edit: There probably won't be a "replay" day or anything similar. I'd imagine they have packs and daily deals set to cover the entire range from start to finish though.
