Game defaults to Zehir only, cannot select any other campaign in Select Campaign window...any ideas??

When you say you cannot select them, do you mean they are there but greyed out maybe? Or are they just missing? If they are missing, there is something wrong with your installation. Uninstall/Reinstall.

Is there any way to bypass nwn2.exe and just force a campaign to run. I am guessing they are somewhat standalone modules?
With the GOG complete version (all modules) installed and you start a new campaign, even an OC, you will see Storm Of Zehir on the background image. That does not mean you are starting a SoZ campaign. It's just a background image. Go past the character creation to start the campaign.

If you start in Daegun's home, you have started the OC.
If you start in a lobby (to level up), or lying on the floor in a cavern, you have started a MotB campaign.
If you start on board ship, you have started a SoZ campaign.
