Want to have an easy playthrough? Pick a Fighter and dump all your points into Longswords... I'd suggest a gnome so you don't suffer a penalty to dexterity or constitution.
2 points in Sword and Shield style and you're set! Longswords and Sword and Shield Style is all you need.
This will get you through the game while you learn about the other classes by having them along in your party.

Easy build:
Max Strength
Max Constitution
Try maxing Dexterity as well while also getting at least 11 or 13 points into wisdom, which will end up in 14 to 16 Wisdom in the end when you get all the tomes. You need some wisdom to resist certain spells better.

If you want to be an arcane caster, don't go for sorcerer if you don't know the game, pick a (non specialized) mage who can choose which spells to memorize, so you can learn.
