What notable LucasArts games are we still missing anyway?
- Full Throttle?
- Star Wars Desktop Adventures: Yoda Typing Teaches, yes?
Meh! MEH MEH MEH MEEEEEEEEEEEHHHH!!! Yes. Nice that we got so many LucasArts classics (especially the bit newer ones like KOTOR 1-2 etc.), but now to something completely different...

Of course; what's more likely to directly communicate one's desire to a publisher that one would like to purchase the publisher's games on GOG, passive-aggressively bitching on GOG's forum or directly contacting the publisher?...
Yes, you'd think they'd learn by now to be more proactive by directly contact the publisher to communicate one's desire to purchase the publisher's games on GOG instead of passive-aggressively bitching on GOG's forum.

Complaining on a forum takes way less effort. (to a point)

Keep in mind that a lot of stuff behind closed doors often ultimately fails to be delivered. So if gog says: we're going to give you game X/publisher Y on March 3rd, but it turns out they can't deliver, it will hurt their brand and the developer//publisher who worked with GOG to bring said game on that day. I think that's the reason they're so secretive.

You think I missed it just because beforehand I didn't explicitly state that I was cognizant that , in general, people (are lazy and) choose the path of least resistance instead of considering logically and acting upon what is much more likely to more directly and substantially communicate their desires to publishers?...

At the top of the GOG wishlist, under Double Fine's "remaster program", are Maniac Mansion 1 & 2, Full Throttle, and possibly (but hopefully not) Curse of Monkey Island. Monkey Island 2 remains uncompleted b/c the original is not here. Then there's a general "All Lucas Arts games" wishlist entry.
Scrolling a ways gets you Escape from Monkey Island, Star Wars Ep. 1 Racer, Star Wars: Shadows Of The Empire, Indiana Jones and the Last Crusade, Star Wars - Battlefront (original), Indiana Jones and the Infernal Machine, and possibly a few others I missed.
Hopefully they'll show up eventually, along with missing game versions and important bonus content.

I guess they just cannot give what they do not have. But only heaven knows why. Maybe because Disney is busy with counting the money from the latest Star Wars merchandise.

It could be that Electronic Arts, who currently holds the rights to make Star Wars games, influenced Disney Interactive to put the kibosh on more releases here because they felt it distracted from their current product, Star Wars: Battlefront (2.0).
