Salvador noted an old message on Steam from 2018 where an Assemble staff member stated that the Leisure Suit Larry IP was owned by Codemasters, and had been licensed out to Assemble Games for exclusive online distribution rights.
Since Electronic Arts now owns Codemasters, it could be that the publisher has ended this licensing deal, meaning Assemble Games has to delist the games from sale.
This would also explain why the series is still available on GOG, because the 2018 message states that the licensing deal with Assemble doesn’t include publishing on GOG."

Leisure Suit Larry Classic is removed from only Steam for now.

Slitherine posted on Steam that they're going to delist Warhammer 40,000: Sanctus Reach and Armageddon games from Steam. They said that they will stay on sale on GOG, but who knows how long it will last.

My understanding is that it was a publisher change. When the publisher changes the games go into a sort of legal limbo where they can't be sold on Gog anymore (Steam is a bit different in that regard, different home country, different rules). The games should remain here until the publisher changes again (if it changes again).

Until any of those classic Larry games re-appear on Steam with EA as a publisher/seller, it's probably best to assume that EA doesn't currently wish to prolong any licenses associated with the Larry IP, and doesn't care for selling the game itself.
If Codemasters itself is the seller on GOG, EA could now just remove the games without any warning. If GOG procured a license for selling those games instead, we have no idea when could it expire. Not sure which is the case, but I'd recommend buying Hits and Misses, Love for Sail and MCL in the very next sale in either way, if you want those games at all.
Now, do we root for EA to be "offended" by Larry and sell the entire IP or not? I mean, it could possibly lead to a new game or remake (Larry 6 and 7 come to mind), but EA could also just mothball the IP and do nothing with it...
