* Area 51 (Midway's 2005 FPS) - I know it's freeware via US Army but I'd still pay to support a GOG release (assuming a "reasonable" price). I can imagine the voice acting might be legally challenging as voice actors included David Duchovny and Marilyn Manson.
I would absolutely love to see Area 51 get released on GOG! Played the crap out of that game on PS2. Here're my other two that would be very nice to see here:

- Darkwatch (FPS)
- Martian Gothic (RE-clone, fixed-camera survival)

There are certainly a ton of legal hurdles for any title to be brought here. That being said, Diablo 1 and Hellfire are both on GoG. If the legal ramifications of Activision/Blizzard can be overcome, then there's really no limit! Bring all the oldies on here! Start plucking out some of that abandonware.
A lot of licensed games. All those games from the mid-2000s "make games based on classic movies" fad; e.g., Scarface, The Godfather 1 and 2, The Warriors, From Russia With Love...some of these would be harder than others (The Warriors is console exclusive, for instance), but they all deserve to be preserved. I recently tried to play The Godfather because I'd heard a lot of good things about it, but it's a total pain in the ass to play today, especially since the best version is on the PS3 and is tied to their stupid motion control gimmick (can't even emulate it properly), so I gave up on it.

Aliens vs. Predator 2 - Do you like Monolith's old stuff like NOLF and Tron 2.0? Well, here's another one on the same engine by the same people from around the same time. Of course, we still need the NOLF games above all.
I do have games that I would want, but honestly part of the fun of coming here is seeing what unexpected games show up every few months.

People have also mentioned Chrome a few posts above, and I agree. It's a much better FPS game than Chaser and Unreal 2 from the same year, plus it had Pawel Blaszczak as the composer and Jon St. John as the protagonist's voice.
Dragon Age 2 and Inquisition, preferably without needing to use the EA website to generate backgrounds for choices from previous games.

I own the legally game on DVD (though the copy I play is from Archive dot org, to bypass need for DVD), but I'd pay a decent amount for GTA: San Andreas, original release with original soundtrack.

Same with Tony Hawk Pro Skater 3, original release with original soundtrack (probably a lot more complicated with licensed skaters, brands, etc. though)
