That's not up to GOG unfortunately. It's possibly even thanks to GOG that the classic versions don't disappear completely but are at least available as a bonus.
Your complaint should be directed at the rights-holders in this case.

Eventually, GoG.com is owned by CD Project, who is not at all in the obligation to sign whatever anybody puts in front of them.

So what - they have the choice to sell either BG EE (with classic as bonus), or not to sell BG at all and leave it all to Steam.
