Ideally, I would like the meals to be:
* fairly easy to prepare
* prepared ahead of time
* stored in the refrigerator for the week
* ready-to-go (packed in plastic bags or similar)
* edible at room temperature (no heating necessary)
* neat to eat (not too messy)
So far, I've been thinking that burritos, meat-n-side combos, and maybe some salads or sandwiches might work.
If anybody has any ideas, or links to good websites, I would really appreciate it.

Thanks for the ideas! I hadn't heard of Scotch Eggs before, they look very hearty and delicious.
I had considered the MRE option, but that might get a bit expensive in the long run. At around $90-$100/case of 12, that's $7-$8/meal. Though, it might be good for an occasion where I couldn't prepare something. Or if the house gets hit by a natural disaster.
And what is a good source for Space-Food?
I've actually tried packing home-made hardtack in the past, simple jerky-and-cashew mixes, and leftovers from dinner. All to varying degrees of success and failure.
