I am able to install and play these games (original, store bought version) on a Windows 8.1 laptop and play for a short while. The issue arises after playing for a few hours. I will get an error message trying to save a game or when I load a previously saved game, it will load a saved game that isn't the most recently saved version. I've run the game(s) as minimum, recommended and full install versions. Any suggestions?

Are you using Galaxy or an offline installer? This might have something to do with a cloud sync gone wrong, but I'm not sure these games even support it.

Oh, I see. I don't know if it's a windows issue, depending on where the saved games are stored it might be either an admin rights issue (it won't allow to edit the files, just create new ones) or simply a compatibility issue, since, depending on the age of the discs, the installation might be too old to run properly on a newer system.

newer windows versions don't like it when you modify stuff in the program files folder. i'd suggest you to create a folder directly in c:, like c:/games/baldurs gate for instance

Yeah definately don't install games to "Program Files" folders. Unless you are running as admin on the game, any changes or new files will be refused in those directories.

Unless there's a registry entry to worry about, just cut&paste to a different folder.

Definitely leave that folder alone for any programs that you can decide where to instal it to. As people mentioned it, it's very restricted about what you can do there. It boggles the mind why it's the default install location for basically everything.

As other users told you, this is the source of your problems with the games.
Program Files is a directory protected against unauthorized modifications. You should uninstall the games from there and then reinstall them into an unprotected directory.

Not much to add, but I've also experienced problems in the past installing games in that directory.

Everything now is saved in C:\GOG Games or directly in a C:\ [insert game name] folder if it wasn't from GOG.

Typically these are freeware / abandonware games that are impossible to get otherwise since the companies are defunct or the original source code is lost forever. I don't use Steam. =P
