Fallout 1 & 2, Heroes of Might and Magic 3 and X-Com UFO Defense are probably my most re-played games from before 2000. What can I say: they are too good to stop playing them, I guess. :)
I'm only going to list the ones that I have on top of my head right now:

- Apogee games (Monster Bash, Commander Keen, Bio Menace, etc)
- LucasArts games (Monkey Island 1+2, DotT, Sam & Max, Indy 4, etc...)
- HoMM 3
- Unreal
- Unreal Tournament '99

- Tank Blaster

- Ken's Labyrinth

As someone who was a purveyor of shareware, that's gonna be a long list.
Quake, Civ2, and Diablo probably. Not sure what it is about Diablo 1 in particular but I really enjoy it and I wish there were more ARPGs like the original.
