Besides the obvious choices like the Bioware/Black Isle games, which older RPGs feature a lot of dialogue or quests, like the Realms of Arkania series, for example?

I've been looking at the top dungeon crawlers website (http://www.dungeoncrawlers.org/game/dungeon-hack/) and really like the style of games like Amberstar, so I was wondering if anyone's played many of these and remembers which ones feel like there's tons of dialogue or stuff to do.

It doesn't have to be DC, it can be a normal RPG.

Lots of text: Betrayal at Krondor (and IMO better than Raymond E. Feist's novels on which it is based)

Darklands and Dark Sun also has quite a bit of text.

Ultima games; increasing amount of text from IV to VII, I think.
Forgotten Realms Unlimited Adventures (FRUA) is a tool to create and run Goldbox style campaigns, and while the game has a graphical interface like those dungeon crawlers, a lot of what is going on in it is conveyed via text description and dialogue. Just like in the old Goldbox games (think Pool of Radiance), but their size limited them in how much text could be in-game, so they outscourced it to journal entries in the manual. In FRUA, text is still limited but the amount is much more generous and there is a lot to read. To what extent depends on the modules; I wouldn't recommend to play the official campaign that comes with it, which is more hack and slash, but many of the free community modules of high quality are narrative focussed (its like the Neverwinter Nights of the 90's). Not so much on actual dialogues though. Active player participation in dialogues through choices is possible in theory, but not used all that often.

Stonekeep has a diary with data about encounters, missions and descripton of every equpment you found in your quest. Relatively expansive but a bit uncomfortable to use due to the nature of the interface. In any way if you are looking for pure classic dungeon crawling plus text/story I thing it is a good pre 2000 example.
