The gog version of Riven had a trojan and I removed it, could that have something to do with it

Some games don't run properly without admin access. Interstate '76 never worked properly for me, so that's probably part of the fix. Wasteland is old, old, old, so it's probably in admin mode to run compatibility mode.

But if these have been in admin mode since 2009 why are the shields only showing up now, I haven't updated windows or anything

GOG updates games over time to ensure continued compatibility. It might be that they've been updated to ensure Windows 10 compatibility, since a lot of games broke when that was released.
If we blow up that station on the moon you are currently orbiting, that should take the shields down.

I mean, you can find out if you don't need it if you like, but who knows what might not work correctly. I've often had to use compatibility mode in the past to run older games, and that admin screen becomes very familiar after a while.
Did you happen to install them in Program Files?
It won't stop it from asking for permission, but if you just want to remove the shield from your icons.
Click on the icon's properties and select change icon, click on the icon and OK, but before you click apply, edit the target field to start with C:\Windows\System32\cmd.exe /c start "" then a space before the path to the .exe, and then click apply.

Are you installing outside windows folders, e.g. C:/mygames?
Do you have full rights when you login, and are not using a reduced access account?
When you say a game had to be removed, is this a gog game as it would t have a Trojan in it, so what av/firewall etc. Have you got?
I have mount and blade installed, last couple of days, on win 10, installed fine, no shield. But that being said there are specific titles which it does this with.
I have just installed blood 2, no shield symbol on either old installer or new one.
