Probably a dumb question but I have to alt tab a lot when gaming. Problem is, this forces my GOG games into windowed mode when I alt+tab back in and I can't change them back to full screen. How do I fix this so when I alt+tab back into a game, it goes back into full screen mode?

Assuming you mean for dosbox games, press alt-enter and it should toggle between full screen and windowed mode. For other games it does depend on the game, but alt-enter is the usual full screen toggle. There isn't a way to force it to automatically go back to full screen, or at least I don't recall there being any.
