Seems some people are working on an open-source port of Realms of Arkania 1-3 from DOS to Windows/Linux called FreeDSA. Any German speakers around here who could make some sense of this for me?

They are still in the planning stage and will try to use the Ogre3D Engine.

The Page is in english and german, so can you please say what info you are looking in particular?

He obviously is a developer as on 11.11.2011 he was speaking about technical stuff, about some files where which dosbox recognizes and exchanges when it detects which game has started.

In other words it's pretty boring for non-insiders.

The forums are very active, but I couldn't make anything of the technical talk there. At least the project looks to be active.
Any indication that they will be porting both the German and English versions of the games?

As I understood, it works with the good old version from Attic as well as the "newer" version (without the Expert Mode).

Zou can only download the binary project, when you post actively on their forum, but as it uses the original files from the Disks/CD, I don't see a problem why it should not work with the english version. Just try download the source and compile it, or look if you can find a binary download of the project.
