I read that backers (Kickstarter) can "destroy" their Steam keys to get a new GOG key and thus redeem it here. I ordered the Collector's Edition from Amazon and just realized that it contains two Steam keys for the game. Is there any possibility to swap those Steam keys for GOG ones? Or does this option just exist for backers?

I'm not positive, but as a backer I got to choose a steam key or a gog key. However if I wanted to do early access that was only on steam. So Larian allowed backers who did early access to basically trade their early access keys in for GOG keys once the game went live. It wasn't really just swapping a retail steam key for a gog key, so its not really the same thing.

That being said I have no idea if Larian would allow you to change the keys from your collector's edition.

As far as I know, that was an option for backers and applied only to the digital copies of the game.
All physical copies come with Steam keys, unless the backer specifically asked for a DRM-free version through a defined procedure.
