Hey, I pre-ordered The Witcher 2 from here a long time ago to get the game uncensored, as I remember that being the case.

But I just noticed today that in the sale it says I do not own the game, then I looked in my game list and I think it's most likely because my game version is 'AU'.

Does that mean my game is censored?

It could be, but it is easily rectified if it is.
Look in your .......\The Witcher 2 Enhanced Edition\CookedPC folder, if you have succubuss.dzip & elf_flotsam.dzip , then it is uncensored.
If they are not there, get them from here & put them in CookedPC.

If you ordered it some time ago and it isn't appearing on your game list now, it's probably a lingering effect from the site reorganization a while back. Go to the Support section (link at the top of the GoG site) and do a search for the "Games not displayed on my account" issue. This link should also work: https://secure.gog.com/account/refresh/
