I'm near the end of the game and this is my first playthrough, but I know that there's quest that heavily influence the war Nilfgard is waging. Yet I haven't encountered any of those, my journal has leftover racing, gambling and fist fighting stuff, scavenger hunt, treasure hunts and the expansion starters. Where do I need to go to find those quest?
I am guessing you refer to "Reason of State": https://witcher.fandom.com/wiki/Reason_of_State

Just so it is easier for you to avoid spoilers, here are the requirements from the wiki:

Reason of State is a secondary quest in The Witcher 3: Wild Hunt.

This quest is available during Act III, but has a number of prerequisites from earlier points in the game:

* Complete A Deadly Plot. This means doing Triss' quests, A Matter of Life and Death and Now or Never to get this one.
* Obtain and complete (or fail) An Eye for an Eye and Redania's Most Wanted. See the notes section for further details.
* Bribe Dijkstra with information about the Nilfgaardian Emperor Emhyr, rather than sway him by force during the main quest Blindingly Obvious.

Note: the decisions during this quest, as well as whether to complete it or not, will affect the circumstances of the game's ending.

Note: this quest will fail if not completed before starting On Thin Ice.

this is my first playthrough as well and I really want to see nilfgaard fail.. so glad i can still do this
are there any other quests that would also change the story a bit in this way?

I don't recall another one, and a quick search seems to confirm that the outcome of the war is decided by "Reason of State".
