Hello,
i just finshed the main story, but have one last sidequest left (besides the qwint-quests).

I can´t start the Witcher-Quest "boatbuilder " at Kaer Trolde. Got the ! , but it doesn´t start.

Any Ideas? Maybe it´s a bug! I don´t know.

It cannot be completed after the main storyline, because it's tied in to the 'Lord of Undvik' quest. You should have spoken to him about Hjalmar and then given him what he wants. Now, it's too late.
