I mean, you will have to trust at least one means to transfer money to GOG so they can transfer a game to your account. As for online security, you should research the best means to cover yourself in general, this has now become an important life skill and practically unavoidable, espacially in the future.
I assume GOG can't practically distribute any form of physical cards to sell in stores since that is not an insignificant logistical and financial burden. And as far as I can see it, it would still basically be a paysafe card.

I buy dont trust online payment anymore since i lost mal old emailaccount after hacking and had alot of troubles there! and since that only buy my games with wallets and payment onaccount when buying something online! and since battlenet,steam orginetc has such cards it would be good thing für gog as wel!really would love to buy games there
You can use paysafecard
I've been promoting/pushing for GOG to release prepaid wallet cards in retail stores for well over a year now. One of the three reasons I haven't made the full switch to buying from GOG only is the fact that it's a lot harder for me to buy from GOG since I don't have a credit card and I don't feel comfortable using a debit card online.. and, unfortunately, you can't use prepaid credit cards since the companies behind those made some dumb "no transactions outside of the US" policy. Steam is the easiest way for me to buy games because they have Steam cards available in stores. If GOG had those, I would literally only buy from GOG unless a game wasn't available here.

Unfortunately, paysafecard isn't super easy to find for everyone. I live in a small town and the nearest vendor for paysafecard is about a 30-minute drive from my home.. which means I could only really do that if I were making a trip out that way for more than one reason.

Paysafecards kannst du an jeder Tankstelle und in einigen anderen Geschäften (z.B. dem Discounter Penny) kaufen. Auf deinem Beleg ist dann eine Pin. Mit der Pin kannst du das Guthaben der Paysafecard in deinen GOG-Geldbeutel übertragen. Dazu musst du nur mit deinem Browser bei GOG eingeloggt sein; da du hier Forenbeiträge schreibst, ist das ja anscheinend kein Problem.
Mit Paypal hat Paysafecard übrigens nichts zu tun und ein Konto legst du für eine Paysafecard auch nicht an. Es ist einfach nur eine Pin-Eingabe.

TL;DR Paypal != Paysafecard
Paypal also works. Just link up your bank account or debit card to your account and transfer money that way if paysafecard or [prepaid] credit cards aren't an option.

For other digital safety, ensure you use strong passwords and change them often. I use KeePass manager to auto-generate password keys and to manage my accounts for other websites. Avoid navigating on suspicious websites and scan your PC weekly for viruses; Windows Defender is good enough for most cases. If the risk and hassle is still too much for you, unfortunately you might have to stick to Steam / Origin / battle.net.

It wouldn't be business smart if they gave 5-10% of their revenue back to the retailer considering they only make 6% net profit on each sale whereas Paypal transaction fees are < 4% revenue (in Canada), so gift cards won't be implemented for a while - if ever.
