How about Vampire the Masquerade: Bloodlines or Star Wars: Knights of the Old Republic 1 and 2?

I'm not a fan of Star Wars and I still found those rpgs enjoyable.

There's also Gothic 1/2. I'm not sure if the graphics are good enough for you and the game is a bit hard. The story is good though.

Made by the same guys as the Risen series. Great story, great music and of course their original language is German ;)
The Elder Scrolls III: Morrowind, Ultima VII, and as someone mentioned already, Vampire the Masquerade: Bloodlines. Word of warning on Vampire though, you will need a fan patch to get it working and even with fixes, it will still feel a bit incomplete but it is still worth your time, even if it was a bit rushed.

I tried Gothic3, but couldn't get over the graphics :)

I have and played Elder Scrolls Oblivion (very good) and Skyrim (disappointing because of the racist storyline and no way to progress without joining either of the parties, I did join the thieves and dark brotherhood instead of killing dragons)

Is this the same version of Vampires the Masqerade?

That's a pity, you really should play Jade Empire, it's a great game.

Redemption is a good game but it is not the same as Bloodlines which came out a few years later and was a lot better than Redemption.
If you can wait until tomorrow, Divinity: Original Sin will be available on GOG, and it's freaking awesome.
In addition to the ones that were already mentioned, and assuming you're mostly looking for fantasy, how about Fable: The Lost Chapters and Kingdoms of Amalur: The Reckoning?

And if you liked NWN, you could also try Avencast: Rise of the Mage. Not the greatest of RPGs, but fun for the most part and definitely worth a look.

Oh, and Arx Fatalis, of course. (English only though, at least on GOG.)

It's pure combat with a dash of story thrown in between levels. Pretty much zero roleplaying and no dialog choices. You do have a choice in what abilities you choose for the characters but that's it. All the characters are predefined. It's a good game though, for that style of game and the graphics are quite nice. I'm currently doing a run through it an having fun. So if you're looking for that type of game, it should do nicely. If you're looking for roleplaying in the sense of BG, NWN, DA:O, etc. then it's not what you want. Hell, it has less actual roleplaying than the Icewind Dale games.

*edit* I'll second Jade Empire and I'd also highly recommend you consider looking at Planescape:Torment (pretty much the ultimate CRPG), the Eschalon series (I'm also doing a run through these ones right now), and Arcanum. Driftmoon is another one that I'd highly recommend. A fun little RPG with a light-hearted feel to it.The graphics on all but Jade Empire may put you off though.

There's also Kingdoms of Amalur

What about the Mass Effect series, or are you looking for more fantasy as opposed to sci-fi?

Oddly enough I just started a new playthrough of Vampire The Masquerade: Bloodlines a few days ago using just the official patches and so far it's been stable (though I'm aware most of the bugs are in Hollywood). I wouldn't go so far as to say it feels "incomplete" (though I know what you mean), but I do dislike how for 99% of the game you're given multiple ways to finish almost every quest and then the final few missions are fully action based.

Anyway, Vampire The Masquerade: Bloodlines gets my vote as well.As others have suggested you may like the (first three) Gothic games as they're made by the developers who made Risen.

Maybe you would like Mount & Blade Warband as well? It's not really that similar to the games you listed, but it is an completely open world roleplaying game (with choice and consequences and randomized events) where you start off as a nobody and can eventually end up ruling the entire land if you play your cards right.
Icewind Dale. Yes, it does use the same engine as Baldur's Gate, but it also does have better graphics. And with the widescreen mod it just looks beautiful.
Mount and Blade and Torchlight are good games, though a little light on the story in either one really. Mount & Blade is one of my most played games on the PC. Placescape Torment may be a game worth considering, except it does use the Baldur's Gate engine. I would only really recommend it if it's on sale as I didn't think it was so wonderful, but definitely worth a spin.
