Well....I loved to play "Secret Weapons of the Luftwaffe" some time ago ;)
regarding Space Sims it is definitely "TIE Fighter"!

Dunno how many will remember it but Firestorm: Thunderhawk 2. I loved it when i was younger, wouldnt mind getting a hold of it again.
Never got to play it, but I always wanted to play TIE Fighter.
My favorite flight sim is the MS Flight Sim series (versions 4, '98 and 2004 in particular). As for space sims-- gotta be TIE Fighter (although Wing Commander: Secret Ops was great fun, too).
MS Flight Simulator 98 was pretty awesome.
X-Plane!
Freespace 2 is the name of the game!
IL-2 Sturmovik... So many good times shooting down planes on that.
IL2 Sturmovik
Falcon 4.0
Crimson Skies that is.
freespace 2
Ace Combat 6, but I never got good at it. Lol
Mig Alley.
EDIT: Rowan's Mig Alley. Fantastic sim.
I have quite a few favorites (IL-2, Strike Fighters 2 series, Falcon 4 AF, Battle of Britain 2, etc.) but Mig Alley still is #1.

IL-2 Sturmovik.
It has the best balance of realism to arcadey goodness. Plus, there is something deeply arousing about landing an experimental German Rocket-plane on a highway as cannon fire tears up the ground in front of you. Let's see a modenr jet do that (without exploding as quickly :p).
