In Chapter 1, there are a few Scleroderm (which has aether) growing in the burnt out hospital. You may need to do the quest there first which is picked up from a guy that will tell you a ghost story in town, and the mushrooms themselves are off the beaten path in corners and otherwise pointless rooms, so you still have to do a bit of searching. But that's the most notable area I've been able to find them.
