Aether dependence in the game is actually pretty silly, if you ask me. It's by far the most important ingredient, as it is required by the most useful alchemical items more than any other. And yet, it is also the most uncommon, at least in chapter 1.
Since all the other ingredients are plentiful to the point of being ubiquitous, you might as well just have a simple aether based crafting system, since that is the only ingredient restricting you from the things you most often want to make. All the superfluous ingredients feel like kind of a sham.

But as other have mentioned, there are at least three vendors (The Incense guy, the witch in the exterior village, and one of the other merchants I cant remember which right now) that sell small amounts of scheroderm (or something, the golden mushrooms that are the primary aether source), and they replenish their stock after time. So daily visits to them them should allow you to buy what you need for the more commonly used potions and bombs.
