it didnt ask where i want to install it and it blatantly installed itself on my windows harddrive.......... can i copy paste it over or do i need to reinstall it with specieal steps?

if I were you I'd back up any important files before doing anything with it (including simple uninstall!)
Some programs work much better in Windows when they are allowed to reside on the same partition as Windows. Galaxy seems like that kind of program.

Windows? Have you bothered to redirect all those logs and stuff? Did you also move things like calculator and such?

I must admit it has been a looong time since I tried keeping only the OS in its own partition but I did not have good experiences with that. A lot of programs went crazy unless they were on C:

I removed pretty much all windows services that aren't crucial for the OS to function, and the stuffs that are kind of hard-wired pre-associated windows programs (as in things that come as part of windows/install with windows, like calculator) remain with the OS - but it is practically nothing. To put it simpler, I've never installed a program to C: other than windows. Never had any problems, and all programs run smoooooth with no degradation of performance over time like used to happen.

During installation of Galaxy you simply tell it to install on the D: drive when it ask you where you want it installed. Maybe it's because you are using the Gwent installer? Instead uninstall Galaxy, download the regular Galaxy installer from here. Then go to library and install Gwent from there inside the client.

You can also install Galaxy on C: and point it to install all games on the D: drive by going to the GOG Logo -> settings... got to love these "Galaxy is shit" threads simply because one doesn't know how to do xyz.

Is there any way on Windows 7 to force an installer to not install on the C: drive? Any symbolic links, junctions or hard links that can be used, or even some registry tweaks?

You can move the Program Files directory to another drive and use that as a default.

not sure what you mean? you can designate where you want anything to install
