I've started to use it less and less. The main reason I used it was to track game time and download updates.
Nowadays moreso for updates. Probably because 2 of the games I'm playing I use some kind of mod that I can use together with Galaxy.

I'll probably use 2.0 just cause I like new stuff.

I don't use it. I see no reason to use a client.
I use it but barely because GOG games I play are Win98 era games and older. They rarely get updated. I will try Galaxy 2.0 though, because of the advertised new feature.

I do not use Galaxy. Why would I want to? I try to install as little as possible on my system. Optimally I wouldnt install anything at all and optimally it should be possible to simply copy a game into a directory and it would run then without messing with the system. Unfortunately Windows is misdesigned in that it inevitably gets messed up eventually if too much stuff is installed on it. And this is not possible for most software including games anyway because they require some 'installation'. And with Galaxy I would have to install one more thing. And it would probably mess with the system more than individual games do.
And there are more obvious reasons against Galaxy like privacy.

Although I use Galaxy on the desktop, I don't have it on my laptop. Because when I travel I sometimes go to places with bad or no internet connection.

To organize the games I just put all the launch shortcut icons inside a folder on the desktop.
I never use it because I'm a single player or local co op kind of gamer. Also I'm already got Wargaming launcher for my World of Tanks and World of Battleship for my online game.
Throwing my ticket into the hat. However, it's not because I intensely hate Galaxy per se, but I have no use of it concurrently. I just download my games directly from the website. It's just easier for me. I'm grateful that GOG provides a DRM-free option like that.

Count me as another that doesn't use it, and won't use it.

I have supported GOG very much in my time here, but if Galaxy ever did become required, then no more.

Some of us, like me, see the old ways of PC gaming to be objectively better than the newer ways.
